Slice the chicken breast into bite-sized pieces. In a bowl, marinate the chicken with 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt. Let it sit for 15 minutes.

Peel and finely chop the ginger and garlic. Slice the red bell pepper into thin strips. Thinly slice the green chilli peppers and spring onions.

In a small bowl, mix 1 tablespoon of dark soy sauce, 1 teaspoon of sesame oil, 1 teaspoon of rice vinegar, 1 tablespoon of honey, and 50 ml of chicken stock to create the sauce. Set it aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 4-5 minutes until cooked through. Remove the chicken from the wok and set it aside.

Return the chicken to the skillet, and pour in the prepared sauce. Stir everything well and allow the sauce to thicken slightly, about 2-3 minutes.

Season with a pinch of salt and black pepper to taste. Add the sliced spring onions and give everything a final stir.
