Season the chicken breasts with salt and black pepper on both sides.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and almost cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. SautΓ© garlic for 30 seconds, or until fragrant.
Pour in the balsamic vinegar and chicken broth. Stir to combine and scrape the bottom of the pan to deglaze it.
Add the honey and dried thyme to the skillet. Stir until the sauce is well combined.
Return the chicken breasts to the skillet. Reduce the heat to medium-low and simmer for 8β10 minutes, occasionally spooning the sauce over the chicken, until the chicken is fully cooked (internal temperature of 165Β°F) and the sauce has thickened slightly.
Taste the sauce and adjust seasoning with additional salt or pepper, if needed.
Remove the skillet from the heat. Garnish the chicken with chopped fresh parsley, if desired.
Serve warm with your choice of side dishes, such as rice, mashed potatoes, or steamed vegetables.
