Preheat the oven to 375°F (190°C).
Cook the spaghetti or linguine in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the onion and cook for 2-3 minutes until softened. Add the garlic and mushrooms, and cook for another 5-7 minutes until the mushrooms are tender and lightly browned.
Remove the mushroom mixture from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
Gradually whisk in the chicken or vegetable broth, ensuring there are no lumps. Add the heavy cream and continue whisking until the sauce thickens, about 3-5 minutes.
If using white wine, stir it in at this stage and cook for 1-2 minutes to let the alcohol evaporate.
Stir in the Parmesan cheese, salt, and black pepper. Adjust seasoning to taste.
Combine the cooked spaghetti, cooked chicken/shrimp/turkey, mushroom mixture, and the sauce in a large mixing bowl. Mix everything together until well-coated.
Transfer the mixture into a greased 9x13-inch baking dish. Sprinkle the shredded mozzarella cheese evenly over the top.
Bake in the preheated oven for 25-30 minutes, or until the top is bubbly and golden brown.
Remove from the oven and let the Tetrazzini rest for a few minutes. Garnish with fresh parsley before serving.
