Place chicken breasts between two pieces of parchment paper or plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness of about 1/2 inch.

In a shallow dish, mix almond flour, salt, and black pepper.

Dredge the chicken breasts in the almond flour mixture, shaking off any excess.

In a large skillet, heat 2 tablespoons of ghee and 2 tablespoons of olive oil over medium heat.
