📝 Instructions

10 steps
1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

2

While the pasta cooks, season the chicken breasts with salt and black pepper on both sides.

3

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side or until fully cooked. Remove from the skillet, let rest for 5 minutes, then slice into thin strips.

4

In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 1 minute until fragrant.

5

Add the crushed tomatoes, dried basil, dried oregano, red pepper flakes, and 1 teaspoon of salt. Stir well and bring to a simmer. Let it cook for 5-7 minutes, stirring occasionally.

6

Stir the cooked penne into the tomato sauce. If the sauce is too thick, add reserved pasta water a little at a time to reach the desired consistency.

7

Add the sliced cooked chicken to the skillet and gently toss to combine.

8

Top the pasta with fresh mozzarella slices and cover the skillet with a lid. Allow the mozzarella to melt, about 2-3 minutes.

9

Remove from heat and sprinkle with chopped fresh basil and grated Parmesan cheese.

10

Serve hot and enjoy your delicious Chicken Penne with Mozzarella and Tomato!
