Preheat a grill pan or regular frying pan over medium heat.

Season both sides of the chicken breasts with 1 tablespoon of olive oil, salt, black pepper, and garlic powder.

Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Set aside and let rest for 5 minutes before slicing into thin strips.

While the chicken cooks, slice the red bell pepper into thin strips and the onion into thin rings.

In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the red pepper and onion and sauté for 5-7 minutes until softened. Add the balsamic vinegar and cook for another 2 minutes. Remove from heat.

Heat a panini press or a skillet over medium heat. Place the sandwiches in the panini press or in the skillet. If using a skillet, press down with a heavy pan or spatula.
