Finely chop the cooked chicken breast and set aside.

Toast the walnuts and almonds in a dry pan over medium heat for 3-4 minutes, then transfer to a food processor and pulse until coarsely ground.

In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and stir continuously for about 1-2 minutes to cook out the raw flour taste.

Gradually pour in the milk, whisking constantly to avoid lumps, and cook until the mixture thickens into a smooth béchamel sauce.

Add the chopped chicken, ground nuts, Parmesan cheese, salt, pepper, and nutmeg into the béchamel sauce. Mix well, then remove from heat and let the mixture cool for 15 minutes.

Shape the cooled mixture into small oval croquettes, about 5 cm long. Place them on a baking sheet lined with parchment paper.

In one shallow bowl, beat the eggs. In another shallow bowl, place the breadcrumbs.

Dip each croquette into the beaten eggs, then coat it in the breadcrumbs. Repeat for all croquettes and set aside.

Heat the vegetable oil in a deep frying pan or pot to 180°C (350°F). Fry the croquettes in batches for 3-4 minutes or until golden brown and crispy.

Use a slotted spoon to remove the croquettes from the oil and place them on a plate lined with paper towels to drain excess oil.
