Season the chicken breasts with smoked paprika, cumin, salt, and black pepper on both sides.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and fully cooked. Remove from the skillet and set aside.

In the same skillet, lower the heat to medium and add the remaining tablespoon of olive oil. Mince the garlic cloves and sautΓ© them in the skillet until fragrant, about 1 minute.

Fluff the couscous with a fork and stir in the diced cherry tomatoes, chopped parsley, lemon zest, and half of the lemon juice. Taste and adjust seasoning as needed with additional salt or pepper.
