Preheat your oven to 375°F (190°C).
Season the chicken breasts on both sides with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside to cool slightly.
In the same skillet, lower the heat to medium and melt 4 tablespoons of butter. Stir in 1/3 cup of all-purpose flour and cook for 1-2 minutes, stirring constantly, until the mixture becomes golden and bubbly.
Gradually whisk in 3 cups of chicken broth, making sure there are no lumps. Allow the sauce to simmer for 2-3 minutes until thickened.
Stir in 1/2 cup of heavy cream, 2 cups of frozen mixed vegetables, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and the remaining 1/2 teaspoon of salt and pepper. Mix well.
Dice the cooked chicken into bite-sized pieces and add them to the skillet. Stir everything together and remove the skillet from heat.
Transfer the chicken mixture into a 9x13-inch baking dish, spreading it out evenly.
Open the pre-made biscuit dough can and place the biscuits on top of the chicken mixture, evenly spaced.
Bake in the preheated oven for 20-25 minutes or until the biscuits are golden brown and the filling is bubbling.
Remove from the oven and let the dish cool for 5 minutes before serving.
