Peel and thinly slice the potatoes into even circles about 1/8-inch thick. Set them aside in a bowl of water to prevent browning.
Season the pork chops on both sides with 1 teaspoon of salt, 1/2 teaspoon of black pepper, paprika, and garlic powder.
