Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the bratwurst sausages and cook until browned on all sides, about 4–5 minutes. Remove the sausages and set them aside to cool slightly. Once cooled, slice them into bite-sized pieces.
In the same pot, add the remaining 1 tablespoon of olive oil. Add the diced onion and cook until softened and translucent, about 3–4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the chopped carrots, celery, and diced potatoes to the pot. Sauté the vegetables for 4–5 minutes, allowing them to soften slightly.
Pour in the chicken broth and add the thyme, salt, and black pepper. Stir well and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let the stew simmer for 20 minutes, or until the potatoes are fork-tender.
