Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package directions, then drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
Stir in the garlic, salt, black pepper, ketchup, yellow mustard, and chopped dill pickles. Cook for 2-3 more minutes, then remove from heat.
In a medium mixing bowl, combine the ricotta cheese, egg, and 1 cup of shredded mozzarella. Mix until smooth.
Grease a 9x13-inch baking dish with non-stick cooking spray or olive oil.
Spread a thin layer of the beef mixture on the bottom of the baking dish.
Place a layer of lasagna noodles on top, trimming them as needed to fit.
Spread 1/3 of the ricotta mixture over the noodles, followed by 1/3 of the beef mixture, and then 1/3 of the remaining shredded cheddar and mozzarella.
Repeat the layers two more times, finishing with a layer of cheeses on top.
Cover the baking dish with foil and bake for 25 minutes.
Remove the foil and bake an additional 15-20 minutes, until the cheese is bubbly and golden brown.
Let the cheeseburger lasagna cool for 10 minutes before slicing and serving.
