📝 Instructions

15 steps
1

Start by preparing the pastry. In a large mixing bowl, combine the all-purpose flour and a pinch of salt.

2

Cut the cold butter into small cubes and rub it into the flour using your fingertips until the mixture resembles breadcrumbs.

3

Add 5 tablespoons of cold water, one tablespoon at a time, and mix until the dough comes together. Wrap the dough in cling film and chill in the refrigerator for 20 minutes.

4

Meanwhile, prepare the filling. Finely chop the white onion and grate the cheddar cheese.

5

Peel and finely dice the potatoes into small cubes. Boil them in salted water for 8-10 minutes, or until just tender. Drain and set aside to cool slightly.

6

In a mixing bowl, combine the cooked potatoes, chopped onions, grated cheese, 0.5 teaspoons salt, and 0.25 teaspoons black pepper. Stir to mix well.

7

Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.

8

After the pastry has chilled, roll it out on a floured surface to a thickness of about 3mm.

9

Use a 6-inch round cutter (or a small plate as a guide) to cut circles out of the pastry. Re-roll the scraps to make additional circles if needed.

10

Place a generous spoonful of the filling in the center of each pastry circle.

11

Beat the egg in a small bowl and use it to brush the edges of the pastry circles.

12

Fold each circle in half over the filling to create a half-moon shape. Press the edges together firmly, then crimp with a fork to seal.

13

Place the pasties on the prepared baking tray. Brush the tops with the beaten egg for a golden finish.

14

Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp.

15

Allow the pasties to cool for a few minutes before serving. Enjoy warm or at room temperature.
