📝 Instructions

8 steps
1

Preheat your oven to 375°F (190°C).

2

Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to the package instructions until al dente. Drain and rinse with cool water to stop the cooking process. Set aside.

3

In a large mixing bowl, combine the ricotta cheese, 1 cup of cheddar cheese, zucchini, shredded carrot, chopped spinach, egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well to create the stuffing mixture.

4

Spread 1 cup of marinara sauce evenly over the bottom of a 9x13-inch baking dish.

5

Using a small spoon, fill each cooked pasta shell with the vegetable and cheese mixture. Place the stuffed shells in the prepared baking dish, open side up.

6

Pour the remaining marinara sauce evenly over the stuffed shells. Sprinkle the remaining 1 cup of cheddar cheese and Parmesan cheese over the top.

7

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Uncover and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

8

Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley, if desired, and serve warm.
