Grate the sharp cheddar cheese finely and let it come to room temperature.
In a food processor, combine the grated cheddar cheese, unsalted butter, all-purpose flour, salt, paprika, and garlic powder. Pulse until the mixture resembles coarse crumbs.
Add 1 tablespoon of cold water and pulse again. If the dough hasnβt come together yet, add another tablespoon of cold water and pulse until the dough forms a ball.
Turn the dough out onto a sheet of plastic wrap. Gently form it into a flat disc, wrap it tightly, and refrigerate for at least 30 minutes.
Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the chilled dough to about 1/8-inch (3 mm) thickness. Use a small cookie cutter or knife to cut out crackers in your desired shapes.
Transfer the cut crackers to the prepared baking sheet, leaving a little space between each one.
Use a fork or toothpick to poke holes in the center of each cracker to prevent puffing during baking.
Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
Remove from the oven and let the crackers cool completely on the baking sheet.
Store the crackers in an airtight container at room temperature for up to 5 days. Serve and enjoy!
