Peel the celeriac, pears, and onion. Chop the celeriac into small cubes (about 1-inch), the pears into rough chunks, and dice the onion.
Mince the garlic cloves and set aside.
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and cook for 3-4 minutes until softened and translucent.
Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
