Season the chicken breasts with garlic powder, smoked paprika, ground cumin, salt, and black pepper. Rub the spices evenly over the chicken.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove the chicken from the skillet and set aside to cool slightly.

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the red and yellow bell peppers and the jalapeño (if using) for 4-5 minutes, until they begin to soften. Remove from heat.

Dice the cooked chicken into small pieces or shred it, then mix it with the cooked bell peppers, diced pineapple, and chopped cilantro in a large bowl.

Lay a tortilla flat on a clean surface. Sprinkle 1/2 cup of shredded mozzarella cheese over one half of the tortilla. Add 1/4 of the chicken and vegetable mixture on top of the cheese, then fold the tortilla in half to create a half-moon shape.

Wipe the skillet clean and heat it over medium heat. Cook each quesadilla for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted.
