Peel the fresh ginger root and grate it finely using a grater or microplane.

In a small saucepan, combine the grated ginger, granulated sugar, and 500 ml of water. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar dissolves completely.

Reduce heat and simmer the mixture for 10 minutes to extract the ginger’s flavor. Remove it from heat and let it cool to room temperature.

Once cooled, strain the ginger syrup through a fine mesh strainer or cheesecloth into a large mixing bowl to remove the ginger solids.

Stir in the fresh lemon juice and mix well.

Take a clean 2-liter plastic bottle (do not use glass, as the carbonation process can cause pressure buildup and risk breakage). Use a funnel to pour the ginger syrup into the bottle.

Leave the bottle at room temperature for 24 to 48 hours, depending on desired carbonation. Check the bottle daily by squeezing it—a firm bottle indicates it’s carbonated.

Once carbonated, transfer the bottle to the refrigerator to slow the fermentation process. Chill for at least 4 hours before serving.
