For an extra touch of sweetness, a drizzle of honey can take these bite-sized treats to the next level. Ready in under an hour and ideal for entertaining, these tarts are a sophisticated addition to any party or holiday spread, delighting both gourmet enthusiasts and casual food lovers alike.
Remove the puff pastry from the freezer and allow it to thaw according to the package instructions.
Peel and thinly slice the onions.
In a large skillet, melt the butter over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring frequently, for about 20-25 minutes or until the onions are golden brown and caramelized. Stir in the brown sugar during the last 5 minutes of cooking. Remove from heat and set aside.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
On a lightly floured surface, unfold the puff pastry sheets and roll each one out slightly. Cut each sheet into 8 equal squares.
Place the puff pastry squares onto the prepared baking sheet, leaving a small space between each square.
Score a small border (about 1/2 inch) around the edges of each square using a knife, being careful not to cut all the way through. Prick the center of each square with a fork multiple times to prevent puffing.
Cut the Brie cheese into small slices and place a piece in the center of each pastry square.
Top the Brie with a spoonful of the caramelized onions. Sprinkle with fresh thyme leaves.
In a small bowl, beat the egg with water to create an egg wash. Brush the edges of each puff pastry square with the egg wash.
Bake in the preheated oven for 15-18 minutes, or until the pastry is golden and puffed.
Remove from the oven and let cool for a few minutes. Optionally, drizzle a small amount of honey over each tart for added sweetness.
Serve warm or at room temperature as an appetizer or snack.
