Preheat your oven to 325°F (165°C). Place a large roasting pan in the oven and fill it halfway with hot water to create a bain-marie for baking the flan.

In a small saucepan, combine 150 grams of granulated sugar and 60 milliliters of water over medium heat. Cook without stirring until the mixture turns a deep amber color, about 8-10 minutes. Immediately and carefully pour the caramel into the bottom of a 9-inch round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool and harden.

In a large mixing bowl, whisk together the sweetened condensed milk, whole milk, brewed coffee, eggs, vanilla extract, and salt until smooth and fully combined.

Pour the flan mixture through a fine-mesh strainer to remove any lumps or bubbles, then gently pour it over the hardened caramel in the baking dish.

Carefully place the baking dish into the preheated roasting pan with water, ensuring the water level reaches halfway up the sides of the baking dish.

Bake the flan for 50-55 minutes, or until the center is just set and a knife inserted into the middle comes out clean.

Remove the baking dish from the water bath and allow the flan to cool to room temperature. Then cover it with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.

To serve, run a knife around the edges of the dish to loosen the flan. Place a large serving plate over the top of the dish and quickly invert it to release the flan. The caramel will flow over the custard, creating a glossy sauce.
