In a mixing bowl, combine the shredded chicken and buffalo sauce. Mix until the chicken is evenly coated. Set aside.
Preheat a panini press or a skillet over medium heat.
Spread a thin layer of butter on one side of each slice of bread. The buttered side will be the outside of your panini.
On the non-buttered side of one slice of bread, spread a small amount of ranch dressing.
Layer 1/4 of the buffalo chicken mixture onto the ranch dressing, then top with 1/4 cup of shredded mozzarella, 1/4 cup of shredded cheddar, and a sprinkle of green onions if desired.
Place a second slice of bread on top, buttered side facing out. Repeat this process to make 4 sandwiches.
