📝 Instructions

10 steps
1

Bring 1 gallon of water to a boil in a large pot, adding 1 tablespoon of salt for flavor.

2

Once the water is boiling, add the rotini pasta and cook according to the package instructions, usually about 8–10 minutes, or until al dente.

3

While the pasta is boiling, prepare the broccoli by cutting it into small, bite-sized florets. Add the florets to the pasta pot during the last 3 minutes of cooking.

4

Reserve 1 cup of the pasta cooking water, then drain the pasta and broccoli. Set aside.

5

In a large skillet, heat the olive oil over medium heat. Mince the garlic cloves and add them to the skillet. Cook for 1–2 minutes, stirring constantly, until fragrant but not browned.

6

Add the red pepper flakes, salt, and black pepper to the skillet, stirring to combine.

7

Add the drained pasta and broccoli to the skillet and toss to coat in the garlic oil mixture.

8

If the pasta seems dry, add a splash of the reserved pasta cooking water, 1–2 tablespoons at a time, until the desired consistency is reached.

9

Remove the skillet from heat and stir in the grated Parmesan cheese and lemon juice.

10

Taste and adjust seasoning if necessary. Serve immediately, garnished with additional Parmesan cheese, if desired.
