Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Cook the bacon in a skillet over medium heat until crispy. Once cooked, place the bacon on a paper towel to drain excess grease and let it cool. Then, chop the bacon into small pieces.

On a lightly floured surface, roll out the puff pastry sheets and cut each sheet into 8 equal squares (16 squares total).

Cut the Brie cheese into 16 small cubes, roughly 1 to 1.5 cm in size.
