πŸ“ Instructions

8 steps
1

1. Desalt the cod by soaking it in cold water for 24-36 hours, changing the water every 8 hours. Pat dry after soaking.

2

2. Peel the potatoes and cut them into chunks. Place them in a pot with cold, salted water and bring to a boil. Cook for 15-20 minutes until fork-tender. Drain and set aside.

3

3. In a large saucepan, bring the milk to a gentle simmer. Add the desalted cod and poach it for 8-10 minutes until it flakes easily. Remove the cod from the milk and set the milk aside for later use.

4

4. Flake the poached cod into small pieces, discarding any skin or bones.

5

5. Heat the olive oil in a small pan over low heat. Add the smashed garlic cloves and infuse the oil for 3-5 minutes. Remove the garlic and reserve the fragrant oil.

6

6. In a large mixing bowl or food processor, combine the flaked cod, cooked potatoes, olive oil, and about 100 ml of the reserved poaching milk. Mash or blend until smooth and creamy. Add more milk if needed to achieve your desired consistency.

7

7. Stir in the chopped parsley, black pepper, and lemon juice. Taste and adjust seasoning if necessary.

8

8. Serve warm or at room temperature with crusty bread for spreading, or as part of another dish.
