Preheat your oven to 180Β°C (350Β°F) and line a baking sheet with parchment paper.
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
