Place the ham in a large stockpot and cover with cold water.

Add the onion (peeled and halved), carrot (peeled and roughly chopped), celery stalks, bay leaves, and black peppercorns to the pot.

Bring the water to a boil, then reduce to a simmer. Cover the pot and let the ham cook gently for 2 hours.
