Slice the beef sirloin into thin strips, about 2-3 inches long. In a small bowl, mix 30 ml of soy sauce, 10 grams of cornstarch, and 15 ml of sesame oil. Add the beef slices to this marinade and set aside for 10 minutes while you prepare the other ingredients.

Trim the ends of the green beans and cut them in half if they are long. Mince the garlic cloves and grate or finely chop the ginger.

In a small bowl, prepare the stir fry sauce by combining the remaining 30 ml of soy sauce, 30 ml of oyster sauce, 30 ml of water, and a pinch of black pepper. Stir well.

Heat 15 ml of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and sear for about 1-2 minutes on each side until browned. Remove the beef from the pan and set it aside on a plate.

In the same skillet, add the remaining 15 ml of vegetable oil. Add the green beans and stir fry for 3-4 minutes until they are bright green and slightly tender.

Push the green beans to one side of the skillet and add the minced garlic and ginger to the empty space. Stir fry for 1 minute until aromatic, being careful not to burn them.

Return the cooked beef to the skillet and pour the prepared stir fry sauce over the beef and green beans. Toss everything together and cook for another 2-3 minutes, allowing the sauce to coat and thicken slightly.

Taste and adjust seasoning if necessary. For extra heat, sprinkle red pepper flakes over the stir fry before serving.
