In a large bowl, pour the strong black tea over the dried mixed fruit. Cover and let soak overnight to allow the fruit to absorb the liquid and plump up.

Preheat your oven to 150°C (300°F) or 130°C fan. Grease and line a 2 lb (900g) loaf tin with baking parchment.
