📝 Instructions

10 steps
1

In a large bowl, mix the all-purpose flour and 1 teaspoon of salt. Gradually add the water and knead to form a smooth and elastic dough. Cover with a damp cloth and let it rest for 30 minutes.

2

While the dough is resting, prepare the soup base by bringing the chicken broth to a boil in a pot. Add the dried anchovies and simmer for 15-20 minutes to infuse the flavors.

3

In a pan, heat 2 tablespoons of cooking oil over medium heat. Add the minced garlic and sliced shallots, stir-frying until fragrant.

4

Add the ground pork to the pan and fry until browned. Season with soy sauce, oyster sauce, and 1 teaspoon of pepper. Set aside.

5

Once the dough has rested, roll it out thinly on a floured surface and cut into strips to form noodles.

6

Strain the anchovy broth to remove the anchovies, returning the clear broth to the pot. Bring it back to a gentle boil.

7

Blanch the prepared noodles in the boiling broth for about 3-4 minutes until cooked.

8

Add the spinach or bok choy to the pot and cook until just wilted, then crack and poach the eggs in the simmering broth.

9

To assemble, divide the noodles and broth among bowls. Top with cooked ground pork, vegetables, and a poached egg.

10

Garnish with spring onions, fried shallots, and serve hot for a delicious and comforting meal.
