Bring a pot of water to a boil. Add a teaspoon of salt for flavor.
Blanch the prawns in the boiling water for 2 minutes or until cooked. Remove and set aside.
Blanch the fish balls (or fish cakes) in the same pot for 2-3 minutes until heated through. Remove and set aside.
Quickly blanch the chopped Chinese lettuce or bok choy in the boiling water for 30 seconds. Remove and set aside.
Blanch the Mee Pok noodles for 2-3 minutes until tender but still chewy. Drain and rinse with cold water to stop the cooking process.
In a wok or large skillet, heat 2 tablespoons of vegetable oil over medium heat. Sauté the minced garlic and shallots until fragrant.
Add the minced pork to the wok and stir-fry until cooked through. Season with 1 tablespoon of soy sauce and 1/2 teaspoon of white pepper. Remove from the wok and set aside.
