📝 Instructions

10 steps
1

Slice the chicken breasts into thin strips and set aside.

2

In a medium bowl, whisk together the balsamic vinegar, olive oil, honey, minced garlic, Italian seasoning, salt, and black pepper to create the marinade.

3

Pour half of the marinade over the chicken strips and let it marinate for at least 15 minutes. Reserve the other half of the marinade for later use.

4

While the chicken marinates, bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

5

Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, flipping occasionally, until the chicken is cooked through and slightly caramelized. Remove the chicken and set aside.

6

In the same skillet, add the cherry tomatoes and cook for 3 minutes, stirring occasionally, until they begin to soften and release their juices.

7

Reduce the heat to medium and add the reserved marinade to the skillet. Let it simmer for 2-3 minutes until slightly thickened.

8

Add the cooked pasta, baby spinach, and reserved pasta water to the skillet. Toss everything together and cook for another 2 minutes until the spinach wilts and the pasta is evenly coated in the sauce.

9

Return the cooked chicken to the skillet and toss well to combine.

10

Remove from heat and sprinkle the dish with grated Parmesan cheese before serving.
