Prepare the lobsters by placing them on their backs on a cutting board. Using a sharp chef's knife, split each lobster down the middle from head to tail. Remove the stomach, intestines, and tomalley (green part) but leave the shell and claws intact. Rinse the lobster halves under cold water and pat dry with paper towels.
