Ingredients

  • 20 pieces Baby portabella mushrooms (Cremini)
  • 8 ounces Cream cheese
  • 1 cup Parmesan cheese, grated
  • 0.5 cup Italian breadcrumbs
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 0.25 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the baby portabella mushrooms with a damp paper towel, and gently remove the stems. Set the caps aside and finely chop the stems.

Step 3

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped mushroom stems and minced garlic for 3-4 minutes, until softened and fragrant.

Step 4

In a mixing bowl, combine the sautéed mushroom stems and garlic with cream cheese, Parmesan cheese, Italian breadcrumbs, chopped parsley, salt, and black pepper. Mix until well blended.

Brush the inside of the mushroom caps with the remaining olive oil and lightly season with a pinch of salt.
