📝 Instructions

11 steps
1

Preheat your oven to 180°C (350°F) and grease a 9-inch springform pan.

2

In a large bowl, mix the flour and sugar for the crust. Add the cold, cubed butter and rub it into the flour mixture with your fingers until it resembles coarse crumbs.

3

Add the cold water, a tablespoon at a time, and mix just until the dough starts to come together. Form into a disk, wrap in plastic wrap, and chill in the refrigerator for 15-20 minutes.

4

Roll the chilled dough into a circle large enough to line the base and sides of your prepared pan. Gently press it into the pan and trim excess edges. Prick the bottom with a fork and refrigerate while preparing the filling.

5

In a bowl, combine the sliced apples, cinnamon, lemon juice, and brown sugar. Toss to coat evenly.

6

Arrange the apple mixture in the prepared crust, pressing down slightly to create an even layer.

7

Bake the pie for 25 minutes to start cooking the apples.

8

While the pie is baking, prepare the Tosca topping. In a small saucepan over medium heat, melt the butter with the sugar. Stir in the almond flour, heavy cream, and sliced almonds and cook for 2-3 minutes until thickened slightly.

9

After the 25-minute bake, remove the pie from the oven and spoon the Tosca topping evenly over the apples.

10

Return the pie to the oven and bake for an additional 25 minutes, or until the topping is golden and bubbling.

11

Allow the pie to cool in the pan for at least 15-20 minutes before removing from the springform pan. Serve warm or at room temperature.
