Ingredients

  • 200 grams Unsalted butter
  • 100 grams Granulated sugar
  • 175 grams All-purpose flour
  • 25 grams Unsweetened cocoa powder
  • 50 grams Cornflakes
  • 150 grams Powdered (icing) sugar
  • 2 tablespoons Unsalted butter (for icing)
  • 2 tablespoons Unsweetened cocoa powder (for icing)
  • 2 tablespoons Hot water
  • 12 pieces Walnut halves

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a mixing bowl, cream the butter and granulated sugar together until light and fluffy.

Step 3

Sift in the all-purpose flour and unsweetened cocoa powder, then mix until just combined.

Step 4

Gently fold in the cornflakes, being careful not to crush them too much.

Step 5

Scoop about 1 tablespoon of dough at a time and shape it into a ball. Place each ball onto the prepared baking tray, leaving about 2 cm (1 inch) of space between them.

Flatten each ball slightly with the back of a spoon to create a rounded cookie shape.

Bake in the preheated oven for 12-15 minutes or until the cookies are firm to the touch. Allow them to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

To make the icing, sift the powdered sugar and cocoa powder into a small bowl. Add the melted butter and hot water, then mix until smooth and spreadable.

Once the cookies have cooled, spread a spoonful of the icing on top of each cookie.

Step 10

Press a walnut half into the center of the icing on each cookie.
