Bring 3 cups of water to a boil in a medium saucepan. Gradually whisk in white polenta and reduce the heat to low. Cook, stirring constantly, for 20-25 minutes until thick and creamy.
Stir in Parmesan cheese, butter, and 0.5 tsp of salt into the cooked polenta. Pour the mixture into a greased 9x13-inch baking dish and spread evenly. Let cool to room temperature, then refrigerate for 1 hour until firm.
Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper. Remove the cooled polenta from the refrigerator and cut out 2-inch rounds using a cookie cutter. Place the rounds on the prepared baking sheet and bake for 10 minutes until slightly crispy on top. Set aside.
Cook the bacon in a large skillet over medium heat until crispy. Drain on paper towels and chop into small pieces. Reserve 1 tbsp of the bacon grease.
