In a small bowl, combine the warm water, instant yeast, and sugar. Stir and allow it to sit for 5-7 minutes until foamy.
In a large mixing bowl, add the all-purpose flour and salt. Mix well.
Pour the yeast mixture into the dry ingredients and start mixing to form a dough. If the dough feels too sticky, add a small amount of flour (1 teaspoon at a time) until it comes together.
Add 1 tablespoon of vegetable oil and knead the dough for 6-8 minutes until it becomes smooth and elastic.
Cover the dough with a damp cloth and let it rest in a warm place for 1 hour, or until it doubles in size.
Punch down the risen dough to release any air. Divide it into 12 equal-sized balls and roll each ball into a smooth circle about 4-5 inches in diameter.
Heat 2 cups of oil in a deep pan over medium heat until it reaches 350Β°F (175Β°C). To test, drop a small piece of dough into the oilβit should bubble and rise to the surface immediately.
Carefully slide one rolled puri into the hot oil. Use a slotted spoon to gently press down on the puri to help it puff up. Fry until golden brown, flipping once, about 1-2 minutes per side.
Remove the puri with the slotted spoon and drain on paper towels. Repeat with the remaining dough rounds.
Serve the yeast puris warm with your favorite curry or chutney.
