Sweetened naturally with honey and enriched with olive oil, these rolls boast a tender crumb with a touch of rustic charm. Ideal for pairing with soups, stews, or even as a sandwich base, they’re versatile and packed with fiber. Optional caraway seeds add a subtly aromatic kick for those who enjoy a traditional rye flavor. Easy to prepare with just 20 minutes of hands-on time, these rolls are baked to golden perfection and make 12 servings—perfect for sharing with family and friends. Whether served warm or at room temperature, these homemade delights are a nutritious and delicious addition to any meal.
In a large mixing bowl, combine the warm water, yeast, and honey. Stir gently and let it sit for 5-10 minutes until foamy.
Add the olive oil, salt, whole wheat flour, and rye flour to the yeast mixture. If using caraway seeds, add them at this stage as well.
Mix the ingredients until a sticky dough forms. If the dough is too sticky, add a little more whole wheat flour, one tablespoon at a time, until it is manageable.
Turn the dough out onto a floured surface and knead for 8-10 minutes until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl and cover it with a clean kitchen towel. Let it rise in a warm place for 1-1.5 hours or until doubled in size.
Punch down the dough and divide it into 12 equal pieces. Shape each piece into a round roll and place them on a parchment-lined baking sheet, spaced slightly apart.
Cover the rolls with a kitchen towel and let them rise again for 30 minutes, or until puffed up.
Preheat your oven to 400°F (200°C).
Bake the rolls in the preheated oven for 18-20 minutes, or until the tops are golden brown and they sound hollow when tapped on the bottom.
Allow the rolls to cool on a wire rack for at least 10 minutes before serving. Enjoy them warm or at room temperature!
