In a large Dutch oven or heavy pot, heat 2 tablespoons of olive oil over medium-high heat. Add the beef pieces in batches, ensuring not to overcrowd the pot. Brown the beef on all sides, about 5-7 minutes per batch. Remove the beef with a slotted spoon and set aside.
