A touch of tomato paste and a rich beef broth create a flavorful base that ties everything together. Not only is this recipe Whole30-approved, but itβs also gluten-free, dairy-free, and free of added sugars, making it a healthy option for anyone following a clean-eating diet. Ready in just over an hour, this cozy stew is perfect for meal prep, serving four satisfying portions, and is best enjoyed with a sprinkle of fresh parsley on top.
Heat a large pot over medium-high heat and add 1 tablespoon of olive oil.
Add the ground beef to the pot and cook until browned, breaking it apart with a spoon. Once cooked, remove the beef from the pot and set aside.
In the same pot, add the remaining tablespoon of olive oil. Saute the diced onion and minced garlic until the onion is translucent, about 4-5 minutes.
Add the sliced carrots, celery, and diced potatoes to the pot. Stir well and cook for an additional 5 minutes.
Stir in the tomato paste, making sure all the vegetables are coated.
Pour in the beef broth, and return the cooked ground beef to the pot. Add the bay leaves, dried thyme, salt, and black pepper.
Bring the stew to a simmer, then reduce the heat to low. Cover the pot and let it cook for about 30 minutes, or until the vegetables are tender.
Remove the bay leaves and adjust seasoning with more salt and pepper if needed.
Serve the stew hot, garnished with chopped fresh parsley.
