📝 Instructions

11 steps
1

Preheat your grill to medium-high heat, approximately 400°F (200°C).

2

Rinse the branzino under cold water and pat dry with paper towels. Set aside.

3

Zest one lemon and juice the other. Slice the remaining lemon thinly.

4

In a small bowl, mix together 2 tablespoons of olive oil, lemon zest, lemon juice, salt, and black pepper.

5

Finely chop half of the parsley and half of the thyme. Add to the olive oil mixture, stirring to combine.

6

Make three diagonal cuts on each side of the branzino to allow flavors to penetrate the fish.

7

Brush the inside and outside of each fish with the herb-lemon olive oil mixture.

8

Stuff the cavity of each branzino with sliced lemon, the remaining parsley, thyme, rosemary, and two whole garlic cloves.

9

Lightly oil the grill grates with the remaining tablespoon of olive oil.

10

Place the fish on the grill and cook for 6-8 minutes on each side until the skin is crispy and the flesh flakes easily with a fork.

11

Remove the fish from the grill and let it rest for a few minutes. Serve hot with additional lemon wedges if desired.
