Preheat your oven to 200°F (93°C) and line two large baking sheets with parchment paper.
Wash and dry the apples thoroughly. Using a mandoline slicer or sharp knife, slice the apples very thinly, around 1/8 inch thick, to ensure they crisp up evenly.
Remove any seeds from the apple slices. It's okay to leave the apple core intact as it adds a unique shape to the chips.
Arrange the apple slices in a single layer on the prepared baking sheets. Make sure the slices do not overlap to allow even drying.
