Wash and dry the apples thoroughly. Using a mandoline slicer or sharp knife, slice the apples very thinly, around 1/8 inch thick, to ensure they crisp up evenly.

Remove any seeds from the apple slices. It's okay to leave the apple core intact as it adds a unique shape to the chips.

Arrange the apple slices in a single layer on the prepared baking sheets. Make sure the slices do not overlap to allow even drying.

Sprinkle the cinnamon evenly over the apple slices. Feel free to add more or less, according to your taste preference.

Place the baking sheets in the preheated oven and bake for 1 hour. After the first hour, flip each apple slice to ensure even crisping.

Continue baking for an additional 30 to 60 minutes, checking the apple slices every 15 minutes. The chips should be completely dry and crispy but not burnt.
