Start by preparing the cashew cream sauce. Soak the raw cashews in hot water for at least 15 minutes.
While the cashews are soaking, slice the chicken breasts into thin strips.
Spiralize the zucchini into noodles using a spiralizer. Alternatively, you can purchase pre-made zucchini noodles.
In a blender, combine the soaked cashews (drained), 1.5 cups of water, garlic cloves, lemon juice, salt, and ground black pepper. Blend until smooth and creamy. Set aside.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken slices, season with salt, pepper, and onion powder, and cook until golden brown and cooked through, about 5-6 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Sauté the spinach until wilted, about 2-3 minutes.
Add the zucchini noodles to the skillet with the spinach, and stir-fry for another 2-3 minutes until they begin to soften.
Pour the cashew cream sauce over the zucchini noodles and spinach, stirring well to combine. Add the cooked chicken back to the skillet.
Continue to cook the mixture for another 3-4 minutes until heated through.
Garnish with fresh basil leaves before serving. Enjoy your Whole30 Creamy Chicken and Spinach Pasta immediately.
