📝 Instructions

15 steps
1

Preheat your oven to 325 degrees Fahrenheit.

2

Remove the turkey from packaging. Check for and remove giblets from the cavity, and pat the turkey dry with paper towels.

3

Cut the lemon into quarters and set aside.

4

Peel and smash the garlic cloves. Cut the onion into large wedges.

5

Gently loosen the skin from the turkey breast by sliding your hands under the skin. Be careful not to tear it.

6

Rub olive oil under the skin and over the entire surface of the turkey.

7

Stuff the cavity of the turkey with the lemon quarters, onion wedges, smashed garlic cloves, rosemary sprigs, thyme sprigs, and fresh sage leaves.

8

Sprinkle the turkey generously with sea salt and black pepper both outside and inside the cavity.

9

Tie the legs together with kitchen twine and tuck the wings beneath the bird.

10

Place the turkey on a roasting rack inside a large roasting pan.

11

Pour two cups of water or Whole30-compliant chicken broth into the bottom of the roasting pan.

12

Roast the turkey in the preheated oven. Calculate approximately 15 minutes per pound of turkey. Check for doneness by inserting a meat thermometer into the thickest part of the thigh without touching bone. It should read 165 degrees Fahrenheit.

13

If the turkey is browning too quickly, cover it loosely with aluminum foil.

14

Once done, remove the turkey from the oven and tent with aluminum foil. Allow it to rest for at least 30 minutes before carving.

15

Carve the turkey and serve with your favorite Whole30-compliant sides.
