Peel and grate the russet potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
In a bowl, mix the dried grated potatoes with 2 tablespoons of coconut flour, a pinch of salt, and pepper.
Heat 1 tablespoon of coconut oil in a large skillet over medium heat. Form the potato mixture into 4 patties and cook for 4-5 minutes on each side until golden brown and crispy. Remove and set aside.
In the same skillet, cook 4 slices of bacon until crispy. Remove from the skillet and let them drain on paper towels.
For the burger patties, in a mixing bowl, combine 500 grams of ground beef, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 0.5 teaspoon of smoked paprika. Mix until well combined.
Divide the meat mixture into 4 equal portions and shape them into patties.
In the same skillet, using the bacon fat, cook the beef patties over medium-high heat for about 4 minutes per side or until desired doneness is reached. Remove and let them rest while you prepare the other ingredients.
In a separate skillet, heat the remaining 1 tablespoon of coconut oil. Fry the eggs to your preference (sunny-side-up works great).
Slice the avocado and tomato.
To assemble the burger, layer as follows: lettuce leaf, burger patty, hash brown, fried egg, bacon slice, avocado slices, and tomato slice. Top with another lettuce leaf to serve the burger closed or open.
Repeat the process for the remaining burgers and serve immediately. Enjoy your hearty Whole30 Big Brekkie Burger!
