Preheat your oven to 400°F (200°C).
Cut the top off the garlic bulb to expose the cloves. Drizzle the garlic with 1 teaspoon of olive oil and wrap it tightly in aluminum foil. Roast in the oven for 30-35 minutes, until the cloves are soft and lightly browned.
While the garlic is roasting, peel the parsnips and chop them into 1-inch pieces.
