📝 Instructions

7 steps
1

Bring a large pot of salted water to a boil. Cook the fusilli pasta according to the package instructions until al dente. Drain, rinse under cold water, and set aside.

2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the lamb loin with salt and pepper, and sear on each side for 3-4 minutes, depending on the thickness. Reduce the heat to medium and cook until it reaches your desired doneness. Remove from the pan, let rest for 5 minutes, then slice thinly.

3

In the same skillet, add another tablespoon of olive oil and sauté the garlic cloves (minced) for 1 minute, until fragrant. Add the cherry tomatoes (halved) and cook for 3-4 minutes until they begin to soften.

4

Thinly slice the red onion and roughly chop the parsley. In a large mixing bowl, combine the cooked pasta, sautéed cherry tomatoes, baby spinach, sliced red onion, and chopped parsley.

5

Crumble the feta cheese into the salad. Add the sliced lamb on top.

6

In a small bowl, whisk together the remaining olive oil, lemon juice, a pinch of salt, and ground black pepper. Drizzle the dressing over the salad and gently toss everything to combine.

7

Serve the salad warm, garnished with extra parsley if desired.
