Preheat your oven to 200°C (400°F).
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the diced lamb and brown on all sides, about 5 minutes. Remove the lamb from the pot and set aside.
In the same pot, sauté the chopped onion, garlic, carrot, and celery for 5-7 minutes, or until softened.
