Great for quick family dinners or a last-minute dinner party star, this chicken piccata is as versatile as it is irresistible!
Place each chicken breast between two sheets of plastic wrap or parchment paper and pound them to an even thickness of about 1/2 inch.
In a shallow dish, mix the all-purpose flour, salt, and black pepper.
Coat each chicken breast lightly in the flour mixture, shaking off any excess.
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Once hot, add the chicken breasts to the skillet. Cook for 3-4 minutes on each side until golden brown and cooked through. Remove the chicken and set aside on a plate.
Reduce the heat to medium and add the remaining olive oil and butter to the skillet. Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the chicken broth, white wine (if using), and lemon juice to the skillet, scraping up any browned bits from the bottom of the pan. Let the mixture simmer for 2-3 minutes.
Stir in the capers and return the chicken breasts to the skillet, spooning some of the sauce over the chicken.
Cook for another 2 minutes to heat through, then remove from heat.
Garnish with fresh parsley (if using), and serve hot with your choice of sides, such as pasta, rice, or steamed vegetables.
