Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Wash and peel the russet potatoes. Thinly slice them to about 1/8-inch thickness using a knife or mandoline slicer. Set them in a bowl of cold water to prevent browning.

In a large skillet over medium heat, heat the olive oil. Add the ground venison or ground beef, and cook until browned and fully cooked, breaking it apart with a spatula. Drain any excess grease if needed.

Add the chopped onion and minced garlic to the skillet with the cooked meat. Cook for another 3-4 minutes until the onion is translucent. Season with 1 tsp of salt and 1/2 tsp of black pepper. Remove from heat and set aside.

Stir in 1 cup of shredded cheddar cheese, the paprika, and the remaining 1/2 tsp of salt and 1/2 tsp of black pepper. Stir until the cheese is melted and the sauce is smooth. Remove from heat.

Start assembling the casserole: Spread half of the sliced potatoes in an even layer in the prepared baking dish. Top with half of the cooked meat mixture, then pour half of the cheese sauce over the top. Repeat with the remaining potatoes, meat, and cheese sauce.

Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and sprinkle the remaining 1 cup of shredded cheddar cheese over the casserole. Return to the oven and bake uncovered for an additional 20 minutes, or until the cheese is golden and bubbly.
